Easy Shortbread Cookies

Shortbread cookies are buttery, a little salty, and a little sweet. They are super easy to make and are also super easy to dress up. If you need to make a quick cookie tray for a party or want to make something that will pair with tea/hot chocolate/coffee, make shortbread cookies.

Here's how this is going to work. I will have the basic shortbread cookie recipe below. Following that, there will be some flavor combinations that you can add to the basic recipe to really amp up your shortbread game.

Basic Shortbread Cookies

Makes 24 cookies

1 cup Butter, unsalted (room temperature)

1/2 cup Sugar

1 tsp Vanilla Extract

1/2 tsp Salt

2 cups All-Purpose Flour

  1. Add your room temperature butter, sugar, vanilla, and salt to a mixing bowl and cream together (should appear kind of fluffy and pale).

  2. Gradually add in the flour. You might want to add the flour a half-cup at a time until it's all incorporated.

  3. You need to chill the dough. If you want to make slice-n-bake style cookies, then form your dough into a log form, wrap in saran wrap, and chill for 60 minutes. If you want to roll out your dough to cut out shapes with a cookie cutter, then form dough into a 1" thick round form (like a pizza), wrap in saran wrap, and chill for 30 minutes.

  4. When you are ready to bake, preheat oven to 350F.

  5. Get your cookies sliced or cut out. The goal is to have cookies that are about 1/4" to 1/2" thick. Arrange your cookies on cookie sheets. If you want to line your cookie sheets for easier clean up, use silpat mats or parchment paper.

  6. Bake for 20 minutes or until golden brown. Allow them to cool for 10-15 minutes before serving or plating.

Note: You can dip cooled cookies in melted chocolate. You can also make royal icing and ice your cookies. You can also roll slice-n-bake style cookies into nonpareils or large sugar crystals.

Fancy Shortbread Flavors

Matcha Lime - Add 2 tsp Matcha Powder, 1 tsp Lime Juice, zest from 1 small lime, and additional 1/2 tsp salt OR sprinkle salt on top of cookies (not heavily).

Orange Cranberry - 1/2 tsp Ground Cardamom, 1/2 tsp Cinnamon, 2 tsp Orange Zest, 1/2 cup Dried Cranberries.

Pecan - 1/4 cup Brown Sugar, 3/4 cup chopped Pecans, 1 tsp Cinnamon.

Earl Grey Lavender - 1-1/2 TBSP Earl Grey Tea Leaves, 1 TBSP Lavender Flowers.

Chocolate Chunk - 2 TBSP Cocoa Powder, 3/4 cup Chocolate Chips, 1 tsp Instant Coffee Powder.

Butterbeer - 1/2 cup Butterscotch Chips, 1/2 cup Toffee Chips, 1/4 cup Brown Sugar

Pistachio Rose - 3/4 cup chopped Pistachios, 1-1/2 tsp Cardamom, 3 TBSP crushed Dried Rose Petals

Maple Bacon - 6 strips Bacon (cooked and chopped fine) OR 1/3 cup Bacon Bits (real, not fake), 1 tsp Maple Extract. Replace the white sugar with 1/4 cup Maple Syrup. Make sure it's actual 100% maple syrup.
